On the Thursday before Lent, Poland erupts into one of the sweetest days of the year: Pączki Day. Bakeries open before dawn, lines stretch down city blocks, and trays of golden, jam-filled pączki move faster than they can be fried. These pillowy pastries — traditionally filled with rosehip jam or plum butter — carry centuries of pre-Lenten tradition, a last celebratory indulgence before fasting season begins.
