Flaky Petals of Fried Sugar Pastry

A delicate, multi-layered pastry from Southern India, particularly Karnataka and Maharashtra. Thin sheets of dough are folded and rolled numerous times, then deep-fried until golden and flaky. The crisp layers are then dusted generously with powdered sugar or soaked briefly in light sugar syrup, resulting in a fragile, shattering texture that dissolves on the tongue.
