Lekach

Honey, spice, and the hope for a sweet year.

Lekach is a honey-sweetened spiced cake, typically loaf-shaped, made with honey, warm spices — cinnamon, ginger, cloves — oil rather than butter, and often coffee or tea for depth of color and flavor. The crumb is dense and moist, closer to a quick bread than a layer cake, and the cake improves with a day of rest after baking, the spices deepening and the texture settling. Recipes vary by household: some include orange peel, some add whisky or brandy, some use rye flour alongside wheat. The core — honey, spice, oil, eggs — stays consistent.

The name lekach appears in German Jewish sources as early as 1200, though the Ashkenazi honey cake itself is documented from 1105, described then as a fine-floured honey-sweetened bread. Food historians trace the spiced honey cake form to twelfth-century Italy, where dense heavily spiced cakes similar to panforte were already established, and connect it to the broader European gingerbread tradition that spread north through Central Europe. Ashkenazi bakers adapted the form to kosher requirements — oil in place of butter makes lekach pareve, suitable to serve after a meat meal — and folded it into the ritual calendar of the High Holidays. The word itself likely derives from the German lecken, to lick, which connects to the practice of giving children honey cake when they began Torah study, so they would associate learning with sweetness.

Lekach is most closely associated with Rosh Hashanah, where honey carries the symbolic weight of the new year’s hoped-for sweetness, and appears again on Erev Yom Kippur, the eve of the Day of Atonement. On that occasion it was customary to ask for and receive a piece of honey cake from a rabbi or elder, passed right hand to right hand — a transaction understood as a symbolic substitute for charity. Among Chassidic communities the rebbe would distribute lekach to his followers. The cake’s ritual function is unusually specific for a baked good: it is not merely food served at a holiday but a thing exchanged with intention, its sweetness carrying meaning in both directions.
